Light and fresh-baked Black Tilapia

An aggressive, invasive and resourceful freshwater fish that has overpowered many native species. This freshwater fish has damaged the indigenous fish population of India. Tilapia was introduced to India to boost food security as it was very easy to farm and grow under harsh conditions but consequently destroyed biodiversity hotspots, which forced a Ban on farming in 1959.
Farmed in the Uk using indoor freshwater stock pools to help maintain water temperature. Black or Red Tilapia has firm flesh and a mild taste. Tilapia is an excellent fish to cook and easily soaks up spices which helps punch flavours.
My idea for this dish was inspired by a Salmon meal I bought from M&S.
I loved their flavours so much that I interpreted their style of seasoning and modified it, check it out:
Ingredients
1 tilapia
1 inch of Ginger sliced in thin strips
5 cloves of garlic sliced as thin as possible
2 tbsp of light soya sauce
1 tbsp of honey
1 chopped scotch bonnet or preferred chilli
3 spring onions roughly chopped lengthways
A fist full of fresh coriander
Wrap in Banana leaf and then foil and place in the oven for 20 minutes :)
